Who knows how to break down the grinder?

It should not live
in one person's head.

Picture day one. The new hire has to break down the grinder, and the one person who knows how is off.

  • Each machine has its steps in the app: how to set it up, run it, clean it and keep it working.
  • The steps are short, and anyone on the team can open them.
  • Search finds a machine by other names, and even with a typo.

So what does a new hire see?

Find it. Follow it.
Log it.

Whose steps are these?

What if we do it differently?

Add your
own steps.

Your kitchen has its own way. Managers and owners can write it in.

  • If your steps leave out something important, the app shows The standard way also says.
  • Each machine shows its state: Clean, Due, Late, Never cleaned, Needs repair, Out of service or Nothing due. It comes from what people did. Nobody types it.
  • Follow the maker's instructions where they apply.

The rules behind the steps

Some steps come
from the law.

These are the cleaning rules the law steps are drawn from. Your county may add its own.

  • Cleaning frequency

Food-contact surfaces cleaned between raw and ready-to-eat, between raw meat types, and at least every 4 hours in continuous use.

    Food Code 4-602.11; R392-102-9(4)–(5)

What is the difference between cleaning and sanitizing?
  • Cleaning and sanitizing

Wash, rinse, sanitize, air-dry. Chlorine 50–99 ppm 10 s; quat per label 30 s; hot water 171°F 30 s. Test kit on site.

    Food Code 4-301.12, 4-302.14, 4-501.112, 4-501.114, 4-703.11, 4-901.11; R392-102-8(17), R392-102-10

What is the difference between cleaning and sanitizing?
  • Mops, rags and cleaning tools kept apart

Restroom and floor tools never touch food areas: a separate, labeled set of cloths, sponges and mops for floors and restrooms; mop buckets filled and emptied only at the mop (service) sink; mops hung to air-dry; no food stored in restrooms or janitor closets; wiping cloths kept in sanitizer between uses and laundered.

Food Code 2-301.15, 5-203.13, 6-501.16, 3-305.11, 3-305.12, 3-304.14, 4-802.11; source protocols (separate labeled sets for food-contact surfaces and for floors and the bathroom)

How often should sanitizer buckets be changed?

Read the cleaning guide

The guide walks through the sink step by step.

What about a fill-in with no account?

Share a
guide link.

Send a link to the how-we-do-it page. The person reads it with no account.

  • The link shows steps and settings only: no names, no records.
  • It is read-only, and it stops working on the date you set, from 1 to 30 days.
  • You can turn it off any time.

What is missing?

What to know
before you rely on it.

The steps help your crew. They do not replace your judgment or your county.

  • Anyone who has a live guide link can read it until it runs out.
  • A guide link is a link you copy, not a QR code.

Ready for day one to go smoothly?

Look up your
own machine first.

Search for the machine your crew asks about most and read its steps.
