    • MAJOR - observed tamales wrapped individually in foil on sheet racks in walk in cooler (some stacked, some single layer) that measured at 45-49F. Tamales were made at 4pm yesterday and employee states temperatures are taken every 2 hours -- after 2 hours yesterday, the tamales measured at 80F. The tamales were taken out of cooler this morning for ~30 mins. to load produce delivery into fridge. Due to tamales not reaching 70F within first 2 hours of cooling and tamales still not being below 41F at time of inspection, tamales have been determined to be improperly cooled and 7 sheet pans (~200 tamales) were voluntarily discarded into trash. Ensure to properly cool foods RAPIDLY from 135-70F within 2 hours and from 70-41F within 4 hours. Take temperatures every hour, cooling foods uncovered, in smaller portions spread out to facilitate cooling, not stacked, and not wrapped in foil if possible.

About this record

Search the county's inspection lookup for the name or license number L10272.

Most people don't know what a normal result looks like for a place that's open every day. The ranges use each place's last routine inspection in this area. No other county is mixed in.

Marin County gives each inspection a result, not a score, so there is no typical range to show.

Marin County posts a green, yellow or red placard after an inspection, and gives no score. In the county's own inspection data, inspectors write "Green (Pass) placard posted" and "a yellow placard is posted due to the multiple major violations observed". We could not read a county page that lists what each color needs, so ask the department.
