Chicken was immediately moved to the walk-in cooler. Parcooked chicken on spits, sitting inside a basin of the 3-compartment prep sink measured 76 F and was made 30 minutes ago. Observed improper cooling of foods: Korma on the counter in a deep container measured 100 F. It was immediately moved to a shallow pan and placed on an ice bath, but was 88 F after 2 hours into cooling. Approximately 1 quart of korma was voluntarily discarded. Cooked potato/veggie tempura observed on 2 pans on shelving outside of the cooler and measured 80-96 F at 1:50. I instructed employees to move immediately these pans to the walk-in cooler. One pan of tempura measured 55 F after 2 hours of cooling, one pan measured 69 F after two hours of cooling. The second pan was placed in the walk-in directly under another pan (which acted as a lid). Sambar in a very large and deep pot in the walk-in measured over 50 F. Observed many deep pans of cooked food in the walk-in that was made the previous day. Temperatures of these foods measured 41 F or less at the time of the inspection. However, no cooling logs were on site for any foods in the cooling process or that were previously cooled. Cool using approved methods (shallow pans, ice baths, ice wands, stirring, in the walk-in, etc) from 135 F to 70 F in 2 hours and from 70 F to 41 F in 4 hours. Monitor food temperatures during the cooling process using a probe thermometer and write down time and temperatures in the cooling log provided. Maintain a log for all foods in the cooling process. Contact me to schedule an informal office hearing to discuss cooling issues.

CHSC 114002 Observed improper cooling of foods: Korma on the counter in a deep container measured 100 F.

About this record

Search the county's inspection lookup for the name or license number L14520.

Most people don't know what a normal result looks like for a place that's open every day. The ranges use each place's last routine inspection in this area. No other county is mixed in.

Marin County gives each inspection a result, not a score, so there is no typical range to show.

Marin County posts a green, yellow or red placard after an inspection, and gives no score. In the county's own inspection data, inspectors write "Green (Pass) placard posted" and "a yellow placard is posted due to the multiple major violations observed". We could not read a county page that lists what each color needs, so ask the department.
