Three large packages of smoked pork measured 72F while maintained on top of a freezer chest in the rear of the back preparation area, across from the three-door upright freezer. Staff initially stated that it had been delivered frozen today, approximately 1 hour prior. When questioned, staff amended their statement, and stated that it had been delivered frozen yesterday and maintained out in ambient overnight. Several rice and pork dishes measured between 59F and 62F while maintained on metal shelving across from the steamer. Per a cook, he had taken it out of the walk-in cooler for lunch service 2 hours prior, with the intention of steaming the aforementioned dishes. Dishes of cooked eggplant and chili measured 97F while maintained out of temperature control on a metal pan obstructing the wash basin of the hand sink at the cook-line. Per the cook, they had been cooked 45 minutes prior. Manager states that employees are supposed to place these particular dishes into the walk-in cooler following cooking. *Note: Cooked eggplant and chili are not subject to time as a public health control, per staff. Numerous potentially hazardous foods measured between 44F and 49F while maintained in the left-side prep/drawer cooler at the cook-line. Ambient of the lower portion of the unit measured 45F via a probe placed inside. Per staff, items had been relocated to the prep cooler for lunch service. [CA] Potentially hazardous foods shall be held at 41F or below, or at 135F or above to prevent the growth of bacteria. [COS] Raw beef relocated to the walk-in cooler. Sliced, cured pork was voluntarily discarded into the dumpster. Smoked pork was discarded into the dumpster. Rice and pork dishes relocated to the walk-in cooler. Cooked eggplant and chili relocated to the walk-in cooler. Items in the left-side prep cooler to be served or else discarded by the end of lunch (2:30PM).

About this record

Opens the county's own page for this place.

Most people don't know what a normal result looks like for a place that's open every day. The ranges use each place's last routine inspection in this area. No other county is mixed in.

100 means the inspector found no problems. Santa Clara County takes points off for each problem. Big ones take off more.

The county posts a green, yellow or red placard after each inspection, and gives routine inspections a score. In the county's data, a routine inspection with no violations listed scored 100, and the score drops as violations are found. The county's page does not say which scores or findings give each color: ask the department.
